The first goal is to review and finish http://docs.jquery.com/UI/Guidelines and there is currently no specific schedule. davidserduke is looking at it, but since it's a large task everyone is welcome. It's a good place to start anyway.
If you want to take over a section to document and want to make sure you aren't duplicating work add your name below.
The first thing to do is get to know jQuery UI. I'm not sure what the best way for that is at the moment. I started by reading the blog post here:

And will be looking at the code here and demos here:

to try and get some sense of how things work.

So looking over what the docs say and what they are supposed to do is going to obviously be the eventual goal.
